Food Service

With a full year of experience providing meals at the Caddo Correctional Center, the Food Service staff was able to begin streamlining its operations to make service delivery more efficient.

The gradual inmate population increase permitted the staff to expand its daily operations and barely notice the increased output. With the parish jail moving slowly toward its inmate capacity, Food Service staffers confidently prepare more than 3,000 meals a day.

While the Food Service staff does almost all of the cooking, 35 inmate workers move foodstuffs from storerooms, serve prepared food onto trays, deliver meals to housing units and clean returned trays, pots and pans and the kitchen.

As the Food Service staff gains more experience, they develop innovative and more efficient ways to use the new kitchen facilities and equipment -- a continuing evolutionary process.
